Early spring weather in Florida is still pleasant most days. Vine ripened Ruskin tomatoes start showing up at Clemons Produce Market. Just like springtime in Florida, the ripe Ruskin tomato has a short shelf life and needs to be consumed in a week, or less.
This menu celebrating early springtime in Florida was inspired by three very ripe Ruskin tomatoes on my countertop, two richly colored bottles of French Rosé, three beautiful Branzini from Ocean Seafood Market and a desire to replicate a Roman Chicory salad – Puntarelle alla Romana.
