The classic Bellini is a refreshing combination of Prosecco – an Italian sparkling wine – white peach puree, and a bit of raspberry or cherry juice to give the cocktail a pink glow. The Bellini originated at Harry’s Bar in Venice where it is served in a tall glass.
This version violates all of the rules of the original Bellini at Harry’s Bar. It’s made with Champagne rather than Prosecco, served in a flute rather than a tall glass, and uses yellow peach nectar rather than white peach puree. But, a refreshing Champagne cocktail is essential with brunch, and this version fits the bill.
- Fill a flute 1/3 full with cold peach nectar.
- Top with Champagne and garnish with mint.
